Ingredients

  • Whole wheat flour - 150 grams
  • Tofu - 100 grams, crumbled
  • Onion - 1 medium, finely chopped
  • Green chili - 1, finely chopped
  • Ginger - 1 teaspoon, grated
  • Garlic - 2 cloves, minced
  • Spinach - 50 grams, chopped
  • Turmeric powder - 1/2 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Coriander powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon or to taste
  • Black pepper - 1/4 teaspoon
  • Oil - 2 tablespoons (for cooking)
  • Water - as needed

Steps

  1. In a mixing bowl, combine the whole wheat flour and a pinch of salt. Gradually add water to form a soft dough. Cover and let it rest for 15 minutes.
  2. In a pan, heat 1 tablespoon of oil over medium heat. Add the chopped onion, green chili, ginger, and garlic, and sauté until the onions are translucent.
  3. Add the crumbled tofu, turmeric, cumin, coriander, salt, and black pepper to the pan. Stir well and cook for about 5-7 minutes until the tofu is heated through.
  4. Add the chopped spinach to the pan and cook for another 2-3 minutes until wilted. Remove from heat and let the mixture cool slightly.
  5. Divide the dough into two equal portions. Roll each portion into a ball and flatten it slightly.
  6. On a floured surface, roll out one ball into a circle about 6 inches in diameter. Place half of the tofu mixture in the center of the circle, then fold the edges over to seal it, forming a pocket.
  7. Carefully roll out the stuffed dough into a flatbread, ensuring the filling does not burst out.
  8. Heat a non-stick skillet over medium heat and add 1 tablespoon of oil. Once hot, place the rolled Baida Roti in the skillet and cook for about 2-3 minutes on each side, or until golden brown.
  9. Repeat the process with the second ball of dough and serve warm with your favorite chutney or salsa.
