- Whole wheat flour - 150 grams
- Tofu - 100 grams, crumbled
- Onion - 1 medium, finely chopped
- Green chili - 1, finely chopped
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Spinach - 50 grams, chopped
- Turmeric powder - 1/2 teaspoon
- Cumin powder - 1/2 teaspoon
- Coriander powder - 1/2 teaspoon
- Salt - 1/2 teaspoon or to taste
- Black pepper - 1/4 teaspoon
- Oil - 2 tablespoons (for cooking)
- Water - as needed
Steps
- In a mixing bowl, combine the whole wheat flour and a pinch of salt. Gradually add water to form a soft dough. Cover and let it rest for 15 minutes.
- In a pan, heat 1 tablespoon of oil over medium heat. Add the chopped onion, green chili, ginger, and garlic, and sauté until the onions are translucent.
- Add the crumbled tofu, turmeric, cumin, coriander, salt, and black pepper to the pan. Stir well and cook for about 5-7 minutes until the tofu is heated through.
- Add the chopped spinach to the pan and cook for another 2-3 minutes until wilted. Remove from heat and let the mixture cool slightly.
- Divide the dough into two equal portions. Roll each portion into a ball and flatten it slightly.
- On a floured surface, roll out one ball into a circle about 6 inches in diameter. Place half of the tofu mixture in the center of the circle, then fold the edges over to seal it, forming a pocket.
- Carefully roll out the stuffed dough into a flatbread, ensuring the filling does not burst out.
- Heat a non-stick skillet over medium heat and add 1 tablespoon of oil. Once hot, place the rolled Baida Roti in the skillet and cook for about 2-3 minutes on each side, or until golden brown.
- Repeat the process with the second ball of dough and serve warm with your favorite chutney or salsa.
