Vegan Aloo Tikki

Ingredients

  • Potatoes - 400 grams (about 2 medium)
  • Green peas - 100 grams (fresh or frozen)
  • Onion - 1 small (finely chopped)
  • Ginger - 1 inch (grated)
  • Green chili - 1 (finely chopped, adjust to taste)
  • Cilantro (fresh coriander) - 2 tablespoons (chopped)
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - 1/4 teaspoon
  • Rice flour - 2 tablespoons (for binding)
  • Oil - for shallow frying (about 4 tablespoons)

Steps

  1. Boil the potatoes in salted water until fork-tender, about 15-20 minutes. Drain and let them cool slightly.
  2. In a mixing bowl, mash the boiled potatoes until smooth. Add the green peas, finely chopped onion, grated ginger, chopped green chili, and cilantro.
  3. Season the mixture with cumin powder, coriander powder, garam masala, salt, and black pepper. Mix well to combine all the ingredients.
  4. Sprinkle rice flour over the mixture for binding and mix until well incorporated. If the mixture is too wet, add a little more rice flour.
  5. Divide the mixture into equal portions and shape each portion into a small patty (tikki).
  6. Heat oil in a non-stick skillet over medium heat. Once hot, place the patties in the skillet, making sure not to overcrowd.
  7. Fry the tikki for about 4-5 minutes on each side, or until they are golden brown and crispy.
  8. Remove the tikki from the skillet and place them on paper towels to absorb excess oil. Serve hot with chutney or vegan yogurt.
