Vegan Aloo Paratha
Vegan Aloo Paratha is a delightful Indian flatbread stuffed with seasoned mashed potatoes, perfect for a midnight snack. It is crispy on the outside and soft on the inside, making it a comforting dish that satisfies hunger.

- Whole wheat flour - 200 grams
- Water - 100 ml (adjust as needed)
- Salt - 1/2 teaspoon
- Potatoes - 300 grams (boiled and mashed)
- Cumin seeds - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Red chili powder - 1/2 teaspoon
- Coriander powder - 1/2 teaspoon
- Fresh coriander leaves - 2 tablespoons (chopped)
- Oil - for cooking (approximately 2 tablespoons)
Steps
- In a large mixing bowl, combine the whole wheat flour and salt. Gradually add water, kneading until a soft dough forms. Cover with a damp cloth and let it rest for 15 minutes.
- In another bowl, mix the mashed potatoes, cumin seeds, turmeric powder, red chili powder, coriander powder, and chopped coriander leaves until well combined.
- Divide the dough into 4 equal portions and roll each portion into a ball.
- Take one dough ball and flatten it slightly. Dust with flour and roll it out into a small circle (about 10 cm in diameter).
- Place a generous spoonful of the potato filling in the center of the rolled dough. Bring the edges together to seal the filling inside and pinch to secure.
- Gently flatten the stuffed dough ball and roll it out again into a larger circle (about 15 cm in diameter), being careful not to let the filling escape.
- Heat a tava or non-stick skillet over medium heat. Cook the rolled paratha for 2-3 minutes on one side until golden brown, then flip it over.
- Brush the cooked side with a little oil and cook the other side for another 2-3 minutes until crispy and brown. Repeat with remaining dough and filling.
- Serve hot with vegan yogurt or pickle.
