Vegan Aloo Paratha

Vegan Aloo Paratha is a delightful Indian flatbread stuffed with seasoned mashed potatoes, perfect for a midnight snack. It is crispy on the outside and soft on the inside, making it a comforting dish that satisfies hunger.

Ingredients

  • Whole wheat flour - 200 grams
  • Water - 100 ml (adjust as needed)
  • Salt - 1/2 teaspoon
  • Potatoes - 300 grams (boiled and mashed)
  • Cumin seeds - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Coriander powder - 1/2 teaspoon
  • Fresh coriander leaves - 2 tablespoons (chopped)
  • Oil - for cooking (approximately 2 tablespoons)

Steps

  1. In a large mixing bowl, combine the whole wheat flour and salt. Gradually add water, kneading until a soft dough forms. Cover with a damp cloth and let it rest for 15 minutes.
  2. In another bowl, mix the mashed potatoes, cumin seeds, turmeric powder, red chili powder, coriander powder, and chopped coriander leaves until well combined.
  3. Divide the dough into 4 equal portions and roll each portion into a ball.
  4. Take one dough ball and flatten it slightly. Dust with flour and roll it out into a small circle (about 10 cm in diameter).
  5. Place a generous spoonful of the potato filling in the center of the rolled dough. Bring the edges together to seal the filling inside and pinch to secure.
  6. Gently flatten the stuffed dough ball and roll it out again into a larger circle (about 15 cm in diameter), being careful not to let the filling escape.
  7. Heat a tava or non-stick skillet over medium heat. Cook the rolled paratha for 2-3 minutes on one side until golden brown, then flip it over.
  8. Brush the cooked side with a little oil and cook the other side for another 2-3 minutes until crispy and brown. Repeat with remaining dough and filling.
  9. Serve hot with vegan yogurt or pickle.
