- Tomato - 1 medium, chopped
- Garlic - 2 cloves, minced
- Ginger - 1 inch piece, grated
- Green chili - 1, slit lengthwise
- Turmeric powder - 1/2 teaspoon
- Cumin seeds - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Fresh cilantro - for garnish, chopped
- Oil - 2 tablespoons
- Water - 100 ml
Steps
- Heat oil in a large pan over medium heat. Add cumin seeds and let them crackle.
- Add chopped onions and sauté until they turn translucent.
- Stir in minced garlic, grated ginger, and slit green chili; cook for another minute.
- Add the chopped tomato and cook until it softens, around 3-4 minutes.
- Sprinkle in the turmeric powder, coriander powder, and salt; mix well.
- Add the diced potatoes and cauliflower florets; stir to coat them with the spices.
- Pour in the water, cover the pan, and cook for about 15 minutes, stirring occasionally, until the vegetables are tender.
- Once cooked, sprinkle garam masala and stir gently. Cook uncovered for an additional 2 minutes.
- Remove from heat, garnish with fresh cilantro, and serve hot.
