  • Potatoes - 300 grams, peeled and diced
  • Cauliflower - 200 grams, cut into florets
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch piece, grated
  • Green chili - 1, slit lengthwise
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Fresh cilantro - for garnish, chopped
  • Oil - 2 tablespoons
  • Water - 100 ml

Steps

  1. Heat oil in a large pan over medium heat. Add cumin seeds and let them crackle.
  2. Add chopped onions and sauté until they turn translucent.
  3. Stir in minced garlic, grated ginger, and slit green chili; cook for another minute.
  4. Add the chopped tomato and cook until it softens, around 3-4 minutes.
  5. Sprinkle in the turmeric powder, coriander powder, and salt; mix well.
  6. Add the diced potatoes and cauliflower florets; stir to coat them with the spices.
  7. Pour in the water, cover the pan, and cook for about 15 minutes, stirring occasionally, until the vegetables are tender.
  8. Once cooked, sprinkle garam masala and stir gently. Cook uncovered for an additional 2 minutes.
  9. Remove from heat, garnish with fresh cilantro, and serve hot.
