  • Potatoes - 400 grams (about 3 medium)

  • Tomato - 1 medium, finely chopped
  • Green chili - 1, slit (adjust to taste)
  • Ginger - 1 teaspoon, grated
  • Garlic - 2 cloves, minced
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Oil - 1 tablespoon
  • Fresh cilantro - for garnish
  • Lemon juice - 1 tablespoon

Steps

  1. Wash and peel the potatoes, then cut them into small cubes.
  2. Heat oil in a pan over medium heat, add cumin seeds, and let them splutter.
  3. Add chopped onions and sauté until golden brown.
  4. Stir in the ginger, garlic, and green chili, cooking for another minute.
  5. Add the chopped tomato and cook until it softens.
  6. Sprinkle in the turmeric, coriander powder, and salt; mix well and cook for 2 minutes.
  7. Add the cubed potatoes to the pan, mix to coat them with the spices, and pour in 1/4 cup of water.
  8. Cover the pan and cook for 10-15 minutes or until the potatoes are tender, stirring occasionally.
  9. Once cooked, sprinkle garam masala and mix gently. Cook for another 2 minutes without the lid.
  10. Remove from heat, add lemon juice, and garnish with fresh cilantro before serving.
