- Potatoes - 300 grams
- Green chili - 2, finely chopped

- Garam masala - 1/2 teaspoon

- Besan (gram flour) - 100 grams
- Rice flour - 2 tablespoons
- Water - as needed
- Buns (pav) - 2
- Chutney (green chutney and tamarind chutney) - as needed
- Fried green chilies - 2, for garnish
- Oil - for frying
Steps
- Boil the potatoes in a pot until tender, about 15-20 minutes. Drain, peel, and mash them in a bowl.
- Add chopped green chili, grated ginger, minced garlic, cilantro, turmeric powder, cumin powder, garam masala, and salt to the mashed potatoes. Mix well to combine.
- Form the potato mixture into two equal-sized patties.
- In a separate bowl, mix besan and rice flour with a pinch of salt. Gradually add water to form a thick batter.
- Heat oil in a deep frying pan over medium heat.
- Dip each potato patty into the batter, ensuring they are well coated. Carefully place them in the hot oil and fry until golden brown, about 3-4 minutes on each side. Remove and drain on paper towels.
- Slice the pav buns in half. Spread green chutney on one half and tamarind chutney on the other.
- Place the fried vada (potato patty) in the center of the bun and top with fried green chili.
- Close the bun and serve hot with extra chutney on the side.
