Ingredients

  • Potatoes - 300 grams
  • Green chili - 2, finely chopped
  • Ginger - 1 inch, grated
  • Garlic - 2 cloves, minced
  • Cilantro - 2 tablespoons, chopped
  • Turmeric powder - 1/2 teaspoon
  • Cumin powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Besan (gram flour) - 100 grams
  • Rice flour - 2 tablespoons
  • Water - as needed
  • Buns (pav) - 2
  • Chutney (green chutney and tamarind chutney) - as needed
  • Fried green chilies - 2, for garnish
  • Oil - for frying

Steps

  1. Boil the potatoes in a pot until tender, about 15-20 minutes. Drain, peel, and mash them in a bowl.
  2. Add chopped green chili, grated ginger, minced garlic, cilantro, turmeric powder, cumin powder, garam masala, and salt to the mashed potatoes. Mix well to combine.
  3. Form the potato mixture into two equal-sized patties.
  4. In a separate bowl, mix besan and rice flour with a pinch of salt. Gradually add water to form a thick batter.
  5. Heat oil in a deep frying pan over medium heat.
  6. Dip each potato patty into the batter, ensuring they are well coated. Carefully place them in the hot oil and fry until golden brown, about 3-4 minutes on each side. Remove and drain on paper towels.
  7. Slice the pav buns in half. Spread green chutney on one half and tamarind chutney on the other.
  8. Place the fried vada (potato patty) in the center of the bun and top with fried green chili.
  9. Close the bun and serve hot with extra chutney on the side.
