Vada Pav

Ingredients
- Potatoes - 300 grams
- Semolina (Rawa) - 2 tablespoons
- Turmeric powder - 1/2 teaspoon
- Mustard seeds - 1/2 teaspoon
- Curry leaves - 6-8 leaves
- Green chilies - 2, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1-inch piece, grated
- Salt - to taste
- Oil - for frying
- Pav (bread rolls) - 2
- Green chutney - 2 tablespoons
- Sweet tamarind chutney - 2 tablespoons
- Onion - 1 small, thinly sliced
Steps
- Boil the potatoes in water until tender, then peel and mash them.
- In a pan, heat 2 tablespoons of oil and add mustard seeds. Once they splutter, add curry leaves, green chilies, garlic, and ginger. Sauté for 1-2 minutes.
- Add the mashed potatoes, turmeric powder, and salt to the pan. Mix well and cook for another 2-3 minutes. Remove from heat and let the mixture cool.
- Once cool, shape the potato mixture into round patties (vada).
- In a bowl, mix semolina with a pinch of salt. Roll each vada in the semolina to coat it lightly.
- Heat oil in a deep frying pan. Once hot, carefully drop in the coated vadas and fry until golden brown and crispy. Drain on paper towels.
- Slice the pav rolls horizontally without cutting all the way through. Spread green chutney on one side and sweet tamarind chutney on the other.
- Place a vada inside each pav, top with sliced onions, and serve immediately.
