Vada
Vada is a delicious and crispy Indian breakfast dish made from spiced lentil batter, deep-fried to perfection. This gluten-free delicacy is often enjoyed with coconut chutney and sambar for a wholesome meal.

Ingredients
- Split urad dal (black gram) - 100 grams
- Rice flour - 30 grams
- Onion - 1 small, finely chopped
- Green chilies - 1, finely chopped
- Ginger - 1 teaspoon, grated
- Curry leaves - 6-8, chopped
- Coriander leaves - 2 tablespoons, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Baking soda - 1/4 teaspoon
- Oil - for deep frying
Steps
- Soak the split urad dal in water for 4 hours or overnight.
- Drain the soaked dal and blend it into a smooth batter with a little water as needed.
- Transfer the batter to a mixing bowl and add rice flour, chopped onion, green chilies, ginger, curry leaves, coriander leaves, salt, black pepper, and baking soda. Mix well.
- Heat oil in a deep frying pan over medium heat.
- Wet your hands and take a small portion of the batter, shape it into a doughnut or round shape with a hole in the center.
- Carefully drop the shaped vadas into the hot oil and fry until golden brown, about 4-5 minutes, turning occasionally for even cooking.
- Remove the vadas with a slotted spoon and drain on paper towels to absorb excess oil.
- Serve hot with coconut chutney and sambar.
