Vada is a delicious and crispy Indian breakfast dish made from spiced lentil batter, deep-fried to perfection. This gluten-free delicacy is often enjoyed with coconut chutney and sambar for a wholesome meal.

Ingredients

  • Split urad dal (black gram) - 100 grams
  • Rice flour - 30 grams
  • Onion - 1 small, finely chopped
  • Green chilies - 1, finely chopped
  • Ginger - 1 teaspoon, grated
  • Curry leaves - 6-8, chopped
  • Coriander leaves - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Baking soda - 1/4 teaspoon
  • Oil - for deep frying

Steps

  1. Soak the split urad dal in water for 4 hours or overnight.
  2. Drain the soaked dal and blend it into a smooth batter with a little water as needed.
  3. Transfer the batter to a mixing bowl and add rice flour, chopped onion, green chilies, ginger, curry leaves, coriander leaves, salt, black pepper, and baking soda. Mix well.
  4. Heat oil in a deep frying pan over medium heat.
  5. Wet your hands and take a small portion of the batter, shape it into a doughnut or round shape with a hole in the center.
  6. Carefully drop the shaped vadas into the hot oil and fry until golden brown, about 4-5 minutes, turning occasionally for even cooking.
  7. Remove the vadas with a slotted spoon and drain on paper towels to absorb excess oil.
  8. Serve hot with coconut chutney and sambar.
