Ingredients

  • Idli rice - 1 cup
  • Split urad dal (black gram) - 1/4 cup
  • Fenugreek seeds - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Water - 1.5 cups (for batter)
  • Onion - 1/2 medium, finely chopped
  • Tomato - 1/2 medium, finely chopped
  • Capsicum (bell pepper) - 1/4 medium, finely chopped
  • Carrot - 1/4 medium, grated
  • Coriander leaves - 2 tablespoons, chopped
  • Oil - 2 tablespoons (for cooking)
  • Black pepper - 1/4 teaspoon (optional)

Steps

  1. Soak the idli rice, urad dal, and fenugreek seeds in water for 4-6 hours or overnight.
  2. Drain and rinse the soaked ingredients, then blend them with 1.5 cups of water until you achieve a smooth batter.
  3. Ferment the batter in a warm place for 8-12 hours or until it has doubled in volume and has bubbles on the surface.
  4. Once fermented, add salt and mix well. The batter should be thick but pourable.
  5. Heat a non-stick pan or griddle over medium heat and add a teaspoon of oil.
  6. Pour a ladleful of batter onto the heated pan and spread it gently into a thick circle.
  7. Sprinkle chopped onions, tomatoes, capsicum, grated carrot, and coriander leaves on top of the batter.
  8. Drizzle a little oil around the edges of the uttapam and cook for about 3-4 minutes until the bottom is golden brown.
  9. Flip the uttapam carefully and cook for an additional 2-3 minutes until the other side is also golden brown.
  10. Repeat the process with the remaining batter and toppings.
  11. Serve hot with coconut chutney or sambar.
