Ingredients

  • Wild rice - 150 grams
  • Fresh salmon fillet - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, diced
  • Zucchini - 1 medium, diced
  • Spinach - 100 grams, fresh
  • Lemon juice - 1 tablespoon
  • Fresh dill - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the wild rice under cold water and then cook it according to package instructions, usually simmering in 2 cups of water for about 20-25 minutes until tender.
  2. While the rice is cooking, heat olive oil in a skillet over medium heat and add minced garlic, sautéing for 1-2 minutes until fragrant.
  3. Add the diced red bell pepper and zucchini to the skillet, cooking for about 5-7 minutes until they soften.
  4. Season the salmon fillet with salt, black pepper, and lemon juice, then place it skin-side down in the skillet with the vegetables. Cook for about 4-5 minutes on each side until the salmon is cooked through.
  5. Once the salmon is cooked, gently fold in the fresh spinach and chopped dill into the vegetable mixture, allowing the spinach to wilt.
  6. Drain the cooked wild rice and serve it on plates, topping with the salmon and vegetable mixture.
