Ingredients

  • Wild rice - 100 grams
  • Salmon fillet - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh dill - 1 tablespoon, chopped
  • Lemon juice - 1 tablespoon
  • Vegetable broth - 300 ml
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Green onions - 2, chopped

Steps

  1. Rinse the wild rice under cold water and drain well.
  2. In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  3. Add the rinsed wild rice and stir for another minute to toast the rice slightly.
  4. Pour in the vegetable broth and add salt and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until the rice is tender and the liquid is absorbed.
  5. While the rice is cooking, preheat a skillet over medium-high heat. Season the salmon fillet with lemon juice, salt, and pepper.
  6. Add the remaining tablespoon of olive oil to the skillet and place the salmon skin-side down. Cook for 4-5 minutes, then carefully flip and cook for another 3-4 minutes until the salmon is cooked through and flakes easily.
  7. Once the rice is done, stir in chopped dill and green onions.
  8. Serve the salmon on a bed of the wild rice mixture, garnished with additional dill and lemon wedges if desired.
