Ingredients

  • trout fillets - 300 grams
  • almond flour - 50 grams
  • egg - 1 large
  • coriander powder - 1 teaspoon
  • cumin powder - 1 teaspoon
  • turmeric powder - 1/2 teaspoon
  • garlic - 2 cloves, minced
  • fresh cilantro - 2 tablespoons, chopped
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • olive oil - 2 tablespoons
  • iceberg lettuce leaves - 4, for wrapping
  • sliced tomato - 1 medium
  • sliced red onion - 1/4 medium
  • lime - 1, for serving

Steps

  1. Preheat a skillet over medium heat and add 1 tablespoon of olive oil.
  2. In a bowl, combine the trout fillets, almond flour, egg, coriander, cumin, turmeric, minced garlic, cilantro, salt, and black pepper. Mix well until a cohesive mixture forms.
  3. Shape the mixture into two patties.
  4. Once the skillet is hot, place the patties in the skillet and cook for about 4-5 minutes per side, or until golden brown and cooked through.
  5. While the patties are cooking, prepare the lettuce wraps by washing and drying the iceberg lettuce leaves.
  6. Once cooked, remove the patties from the skillet and let them rest for a minute.
  7. To assemble, place each trout patty on a lettuce leaf, top with sliced tomato and red onion, and squeeze lime juice over the top.
  8. Wrap the lettuce around the filling and serve immediately.
