- Tomatoes - 400 grams, chopped
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Ginger - 1 inch, grated
- Green chili - 1, slit
- Coriander powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Mustard seeds - 1/2 teaspoon
- Curry leaves - 5-6 leaves
- Vegetable broth or water - 500 ml
- Cilantro - a handful, chopped
- Salt - to taste
- Lemon juice - 1 tablespoon
- Oil - 1 tablespoon
Steps
- Heat oil in a pot over medium heat. Add mustard seeds and let them splutter.
- Add curry leaves, followed by chopped onions, and sauté until they turn translucent.
- Stir in the minced garlic, grated ginger, and slit green chili. Cook for another minute until fragrant.
- Add the chopped tomatoes to the pot, along with coriander, cumin, turmeric powders, and salt. Cook until the tomatoes soften, about 5-7 minutes.
- Pour in the vegetable broth or water and bring the mixture to a boil. Reduce heat and let it simmer for 15-20 minutes.
- Once cooked, blend the soup using an immersion blender for a smooth texture or leave it chunky if preferred.
- Stir in lemon juice and chopped cilantro just before serving. Adjust seasoning if necessary.
- Serve hot with rice or bread.
