  • Tomatoes - 400 grams, chopped
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch, grated
  • Green chili - 1, slit
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Mustard seeds - 1/2 teaspoon
  • Curry leaves - 5-6 leaves
  • Vegetable broth or water - 500 ml
  • Cilantro - a handful, chopped
  • Salt - to taste
  • Lemon juice - 1 tablespoon
  • Oil - 1 tablespoon

Steps

  1. Heat oil in a pot over medium heat. Add mustard seeds and let them splutter.
  2. Add curry leaves, followed by chopped onions, and sauté until they turn translucent.
  3. Stir in the minced garlic, grated ginger, and slit green chili. Cook for another minute until fragrant.
  4. Add the chopped tomatoes to the pot, along with coriander, cumin, turmeric powders, and salt. Cook until the tomatoes soften, about 5-7 minutes.
  5. Pour in the vegetable broth or water and bring the mixture to a boil. Reduce heat and let it simmer for 15-20 minutes.
  6. Once cooked, blend the soup using an immersion blender for a smooth texture or leave it chunky if preferred.
  7. Stir in lemon juice and chopped cilantro just before serving. Adjust seasoning if necessary.
  8. Serve hot with rice or bread.
