Ingredients
- Basmati rice - 1 cup
- Tomatoes (chopped) - 2 large (about 300g)
- Onion (finely chopped) - 1 medium
- Garlic (minced) - 3 cloves
- Ginger (grated) - 1 inch piece
- Green chili (slit) - 1
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Salt - to taste
- Vegetable oil - 2 tablespoons
- Fresh cilantro (chopped) - 2 tablespoons
- Water - 2 cups
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a large pan, heat the vegetable oil over medium heat. Add cumin seeds and let them splutter.
- Add the finely chopped onion and sauté until golden brown.
- Stir in the minced garlic, grated ginger, and slit green chili; sauté for another minute until fragrant.
- Add the chopped tomatoes and cook until they soften and release their juices, about 5-7 minutes.
- Sprinkle in the turmeric powder, red chili powder, and salt; mix well and cook for another 2 minutes.
- Drain the soaked rice and add it to the pan, stirring gently to coat the rice with the tomato mixture.
- Pour in 2 cups of water, bring to a boil, then reduce the heat to low, cover, and let it simmer for 15 minutes or until the rice is cooked and water is absorbed.
- Once done, remove from heat and let it sit covered for 5 minutes. Fluff with a fork and mix in garam masala and chopped cilantro before serving.
