Ingredients

  • Basmati rice - 1 cup
  • Tomatoes (chopped) - 2 large (about 300g)
  • Onion (finely chopped) - 1 medium
  • Garlic (minced) - 3 cloves
  • Ginger (grated) - 1 inch piece
  • Green chili (slit) - 1
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Salt - to taste
  • Vegetable oil - 2 tablespoons
  • Fresh cilantro (chopped) - 2 tablespoons
  • Water - 2 cups

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a large pan, heat the vegetable oil over medium heat. Add cumin seeds and let them splutter.
  3. Add the finely chopped onion and sauté until golden brown.
  4. Stir in the minced garlic, grated ginger, and slit green chili; sauté for another minute until fragrant.
  5. Add the chopped tomatoes and cook until they soften and release their juices, about 5-7 minutes.
  6. Sprinkle in the turmeric powder, red chili powder, and salt; mix well and cook for another 2 minutes.
  7. Drain the soaked rice and add it to the pan, stirring gently to coat the rice with the tomato mixture.
  8. Pour in 2 cups of water, bring to a boil, then reduce the heat to low, cover, and let it simmer for 15 minutes or until the rice is cooked and water is absorbed.
  9. Once done, remove from heat and let it sit covered for 5 minutes. Fluff with a fork and mix in garam masala and chopped cilantro before serving.
