- Ripe tomatoes - 300 grams
- Onion - 50 grams, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green chili - 1, slit
- Cumin seeds - 1/2 teaspoon
- Mustard seeds - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Red chili powder - 1/2 teaspoon
- Salt - to taste
- Coriander leaves - 2 tablespoons, chopped
- Oil - 1 tablespoon
Steps
- Heat oil in a pan over medium heat. Add cumin seeds and mustard seeds, allowing them to splutter.
- Add chopped onions and sauté until they are translucent.
- Stir in minced garlic, grated ginger, and slit green chili. Cook for another minute until fragrant.
- Chop the tomatoes and add them to the pan along with turmeric powder, red chili powder, and salt. Mix well.
- Cook the mixture on medium heat for about 10-12 minutes, stirring occasionally, until the tomatoes break down and the chutney thickens.
- Remove from heat and stir in chopped coriander leaves. Allow it to cool slightly before serving.
