Ingredients

  • Ripe tomatoes - 300 grams
  • Onion - 50 grams, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green chili - 1, slit
  • Cumin seeds - 1/2 teaspoon
  • Mustard seeds - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Salt - to taste
  • Coriander leaves - 2 tablespoons, chopped
  • Oil - 1 tablespoon

Steps

  1. Heat oil in a pan over medium heat. Add cumin seeds and mustard seeds, allowing them to splutter.
  2. Add chopped onions and sauté until they are translucent.
  3. Stir in minced garlic, grated ginger, and slit green chili. Cook for another minute until fragrant.
  4. Chop the tomatoes and add them to the pan along with turmeric powder, red chili powder, and salt. Mix well.
  5. Cook the mixture on medium heat for about 10-12 minutes, stirring occasionally, until the tomatoes break down and the chutney thickens.
  6. Remove from heat and stir in chopped coriander leaves. Allow it to cool slightly before serving.
