  • Green onion - 2 stalks, chopped
  • Bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Soy sauce (or coconut aminos for Paleo) - 2 tablespoons
  • Lemon juice - 1 tablespoon

  • Fresh parsley or cilantro - for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Place the salmon fillets on a baking sheet lined with parchment paper. Drizzle with 1 tablespoon of olive oil, and season with salt, black pepper, and lemon juice. Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
  3. While the salmon is baking, prepare the cauliflower rice. In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
  4. Add the grated cauliflower, diced bell pepper, and zucchini to the skillet. Stir-fry for about 5-7 minutes, or until the vegetables are tender. Season with soy sauce (or coconut aminos) and stir well to combine.
  5. Once the salmon is done, remove it from the oven and let it rest for a few minutes before flaking it into large pieces.
  6. To serve, divide the cauliflower rice mixture between two bowls, top with the flaked salmon, and garnish with chopped green onion and fresh parsley or cilantro.
