Ingredients
- Zucchini - 2 medium
- Fresh salmon fillet - 200 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Cherry tomatoes - 150 grams, halved
- Fresh dill - 1 tablespoon, chopped
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Spiralize the zucchini using a spiralizer or a vegetable peeler to create zucchini noodles and set aside.
- Season the salmon fillet with salt and black pepper.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the salmon and cook for about 4-5 minutes on each side, or until cooked through. Remove from heat and flake the salmon into bite-sized pieces.
- In the same skillet, add the remaining tablespoon of olive oil and minced garlic. Sauté for about 1 minute until fragrant.
- Add the halved cherry tomatoes to the skillet and cook for another 3-4 minutes until they soften.
- Add the spiralized zucchini noodles to the skillet and toss to combine with the tomatoes and garlic. Cook for an additional 2-3 minutes until the noodles are tender but still crisp.
- Return the flaked salmon to the skillet, add the fresh dill and lemon juice, and gently mix everything together.
- Season with additional salt and pepper to taste before serving.
