Ingredients

  • Whole wheat noodles - 100 grams
  • Vegetable broth - 500 ml
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Spinach - 1 cup, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Green onions - 2, chopped
  • Red chili flakes - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a pot, bring the vegetable broth to a boil.
  2. Add the whole wheat noodles and cook according to package instructions until al dente, usually about 8-10 minutes.
  3. In a separate pan, heat sesame oil over medium heat and sauté the minced garlic and grated ginger until fragrant.
  4. Add the diced carrot and bell pepper to the pan, and cook for about 5 minutes until they are tender.
  5. Stir in the chopped spinach, soy sauce, red chili flakes, salt, and black pepper, cooking for another 2-3 minutes until the spinach wilts.
  6. Once the noodles are cooked, drain and add them to the vegetable mixture in the pan.
  7. Toss everything together gently to combine, and adjust seasoning if necessary.
  8. Serve hot, garnished with chopped green onions.
