  • Black beans - 1 cup, cooked and drained
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 ml
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
  2. Add the minced garlic and continue to sauté for an additional minute.
  3. Stir in the diced zucchini and yellow squash, cooking for about 5 minutes until they start to soften.
