  • Coconut milk - 1/2 cup
  • Maple syrup - 2 tablespoons
  • Cinnamon - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Chopped walnuts - 1/4 cup
  • Fresh blueberries - 1/2 cup

Steps

  1. In a medium saucepan, bring 2 cups of water to a boil.
  2. Slowly add the yellow cornmeal while whisking continuously to prevent lumps.
  3. Reduce the heat to low and cook for about 10 minutes, stirring occasionally until the porridge thickens.
  4. Stir in the cooked black beans, grated zucchini, coconut milk, maple syrup, cinnamon, and salt.
  5. Cook for an additional 5 minutes, stirring until all ingredients are well combined and heated through.
