Ingredients

  • Cauliflower - 300 grams
  • Almond flour - 50 grams
  • Egg - 1 large
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Zucchini - 100 grams, diced
  • Cherry tomatoes - 100 grams, halved
  • Cooked corn - 100 grams
  • Black beans - 100 grams, drained and rinsed
  • Ground cumin - 1/2 teaspoon
  • Chili powder - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 220°C (425°F).
  2. In a food processor, pulse the cauliflower until it resembles rice, then microwave it covered for 5 minutes.
  3. Let the cooked cauliflower cool, then squeeze out excess moisture using a kitchen towel.
  4. In a bowl, combine the cauliflower, almond flour, egg, olive oil, salt, and black pepper to form the crust dough.
  5. Spread the dough onto a parchment-lined baking sheet, shaping it into a round pizza crust about 1/2 inch thick.
  6. Bake the crust in the preheated oven for 15 minutes or until golden brown.
  7. While the crust is baking, in a skillet, heat a little olive oil over medium heat and sauté the zucchini and cherry tomatoes for about 5-7 minutes until tender.
  8. Remove the crust from the oven and spread the sautéed vegetables evenly over it.
  9. Top with cooked corn and black beans, then sprinkle ground cumin and chili powder on top.
  10. Return the pizza to the oven and bake for an additional 10 minutes.
  11. Remove from the oven, garnish with fresh cilantro, and let cool slightly before slicing.
