- Cauliflower - 300 grams
- Almond flour - 50 grams
- Egg - 1 large
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Zucchini - 100 grams, diced
- Cherry tomatoes - 100 grams, halved
- Cooked corn - 100 grams
- Black beans - 100 grams, drained and rinsed
- Ground cumin - 1/2 teaspoon
- Chili powder - 1/4 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
Steps
- Preheat the oven to 220°C (425°F).
- In a food processor, pulse the cauliflower until it resembles rice, then microwave it covered for 5 minutes.
- Let the cooked cauliflower cool, then squeeze out excess moisture using a kitchen towel.
- In a bowl, combine the cauliflower, almond flour, egg, olive oil, salt, and black pepper to form the crust dough.
- Spread the dough onto a parchment-lined baking sheet, shaping it into a round pizza crust about 1/2 inch thick.
- Bake the crust in the preheated oven for 15 minutes or until golden brown.
- While the crust is baking, in a skillet, heat a little olive oil over medium heat and sauté the zucchini and cherry tomatoes for about 5-7 minutes until tender.
- Remove the crust from the oven and spread the sautéed vegetables evenly over it.
- Top with cooked corn and black beans, then sprinkle ground cumin and chili powder on top.
- Return the pizza to the oven and bake for an additional 10 minutes.
- Remove from the oven, garnish with fresh cilantro, and let cool slightly before slicing.
