Ingredients

  • Carrot - 100 grams, finely chopped
  • Cabbage - 150 grams, finely shredded
  • Green beans - 100 grams, chopped
  • Coconut - 50 grams, grated
  • Mustard seeds - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Dried red chili - 1, broken
  • Turmeric powder - 1/4 teaspoon
  • Oil - 1 tablespoon
  • Salt - to taste
  • Fresh coriander - 2 tablespoons, chopped

Steps

  1. Heat the oil in a pan over medium heat.
  2. Add the mustard seeds and cumin seeds to the hot oil, and sauté until they start to splutter.
  3. Stir in the broken dried red chili and turmeric powder, mixing well.
  4. Add the chopped carrots, green beans, and cabbage to the pan, and stir-fry for about 5-7 minutes until they begin to soften.
  5. Sprinkle salt to taste and continue to cook for another 8-10 minutes, stirring occasionally.
  6. Add the grated coconut and mix thoroughly, cooking for an additional 2-3 minutes.
  7. Remove from heat, garnish with fresh coriander, and serve warm.
