- Carrot - 100 grams, finely chopped
- Cabbage - 150 grams, finely shredded
- Green beans - 100 grams, chopped
- Coconut - 50 grams, grated
- Mustard seeds - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Dried red chili - 1, broken
- Turmeric powder - 1/4 teaspoon
- Oil - 1 tablespoon
- Salt - to taste
- Fresh coriander - 2 tablespoons, chopped
Steps
- Heat the oil in a pan over medium heat.
- Add the mustard seeds and cumin seeds to the hot oil, and sauté until they start to splutter.
- Stir in the broken dried red chili and turmeric powder, mixing well.
- Add the chopped carrots, green beans, and cabbage to the pan, and stir-fry for about 5-7 minutes until they begin to soften.
- Sprinkle salt to taste and continue to cook for another 8-10 minutes, stirring occasionally.
- Add the grated coconut and mix thoroughly, cooking for an additional 2-3 minutes.
- Remove from heat, garnish with fresh coriander, and serve warm.
