- Onion, thinly sliced - 1 medium
- Garlic, minced - 2 cloves
- Ginger, grated - 1 teaspoon
- Carrot, diced - 1 medium
- Green peas - 1/2 cup
- Potato, diced - 1 medium
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Salt - to taste
- Coriander leaves, chopped - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a large pot, heat the vegetable oil over medium heat. Add the cumin seeds, bay leaf, cinnamon stick, cloves, and cardamom pods. Sauté for about 1 minute until fragrant.
- Add the sliced onion and cook until translucent, about 5 minutes.
- Stir in the minced garlic and grated ginger, cooking for another 1-2 minutes until fragrant.
- Add the diced carrot, potato, and green peas to the pot, cooking for about 5 minutes, stirring occasionally.
- Sprinkle in the turmeric powder, red chili powder, and salt, mixing well to coat the vegetables in the spices.
- Drain the soaked rice and add it to the pot. Gently stir to combine with the vegetables and spices without breaking the rice grains.
- Pour in 2 cups of water, bring to a boil, then reduce the heat to low and cover the pot. Cook for 15-20 minutes, or until the rice is tender and the water is absorbed.
- Once cooked, remove from heat and let it sit covered for an additional 5 minutes.
- Fluff the rice with a fork, garnish with chopped coriander leaves, and serve hot.
