Ingredients

  • Basmati rice - 1 cup
  • Water - 2 cups
  • Vegetable oil - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Bay leaf - 1
  • Cinnamon stick - 1 inch

  • Cardamom pods - 2
  • Onion, thinly sliced - 1 medium
  • Garlic, minced - 2 cloves
  • Ginger, grated - 1 teaspoon
  • Carrot, diced - 1 medium
  • Green peas - 1/2 cup
  • Potato, diced - 1 medium
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Salt - to taste
  • Coriander leaves, chopped - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a large pot, heat the vegetable oil over medium heat. Add the cumin seeds, bay leaf, cinnamon stick, cloves, and cardamom pods. Sauté for about 1 minute until fragrant.
  3. Add the sliced onion and cook until translucent, about 5 minutes.
  4. Stir in the minced garlic and grated ginger, cooking for another 1-2 minutes until fragrant.
  5. Add the diced carrot, potato, and green peas to the pot, cooking for about 5 minutes, stirring occasionally.
  6. Sprinkle in the turmeric powder, red chili powder, and salt, mixing well to coat the vegetables in the spices.
  7. Drain the soaked rice and add it to the pot. Gently stir to combine with the vegetables and spices without breaking the rice grains.
  8. Pour in 2 cups of water, bring to a boil, then reduce the heat to low and cover the pot. Cook for 15-20 minutes, or until the rice is tender and the water is absorbed.
  9. Once cooked, remove from heat and let it sit covered for an additional 5 minutes.
  10. Fluff the rice with a fork, garnish with chopped coriander leaves, and serve hot.
