- Red bell pepper - 1, sliced
- Green bell pepper - 1, sliced
- Red onion - 1, sliced
- Zucchini - 1, sliced
- Cherry tomatoes - 100 grams, halved
- Coconut yogurt - 100 grams
- Tandoori masala - 1 tablespoon
- Olive oil - 1 tablespoon
- Fresh coriander - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Vegan cheese - 100 grams (optional)
Steps
- Preheat the oven to 220°C (428°F).
- In a bowl, mix the coconut yogurt, tandoori masala, olive oil, salt, and black pepper to make the marinade.
- Add the sliced red bell pepper, green bell pepper, red onion, and zucchini to the marinade, and toss well to coat the vegetables evenly. Let them marinate for 15 minutes.
- Roll out the pizza dough on a floured surface to your desired thickness and shape.
- Transfer the rolled-out dough to a baking tray lined with parchment paper.
- Spread a thin layer of the remaining coconut yogurt over the base of the pizza dough.
- Arrange the marinated vegetables evenly over the pizza base. Scatter halved cherry tomatoes on top.
- If using, sprinkle vegan cheese over the top of the pizza.
- Bake in the preheated oven for 15-20 minutes, or until the edges are golden and the vegetables are tender.
- Remove from the oven and garnish with fresh coriander before slicing and serving.
