Ingredients

  • Pizza dough - 200 grams
  • Red bell pepper - 1, sliced
  • Green bell pepper - 1, sliced
  • Red onion - 1, sliced
  • Zucchini - 1, sliced
  • Cherry tomatoes - 100 grams, halved
  • Coconut yogurt - 100 grams
  • Tandoori masala - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Fresh coriander - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Vegan cheese - 100 grams (optional)

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a bowl, mix the coconut yogurt, tandoori masala, olive oil, salt, and black pepper to make the marinade.
  3. Add the sliced red bell pepper, green bell pepper, red onion, and zucchini to the marinade, and toss well to coat the vegetables evenly. Let them marinate for 15 minutes.
  4. Roll out the pizza dough on a floured surface to your desired thickness and shape.
  5. Transfer the rolled-out dough to a baking tray lined with parchment paper.
  6. Spread a thin layer of the remaining coconut yogurt over the base of the pizza dough.
  7. Arrange the marinated vegetables evenly over the pizza base. Scatter halved cherry tomatoes on top.
  8. If using, sprinkle vegan cheese over the top of the pizza.
  9. Bake in the preheated oven for 15-20 minutes, or until the edges are golden and the vegetables are tender.
  10. Remove from the oven and garnish with fresh coriander before slicing and serving.
