Ingredients

  • Chicken thigh fillets - 400 grams
  • Plain yogurt - 150 grams
  • Lemon juice - 2 tablespoons
  • Ginger paste - 1 tablespoon
  • Garlic paste - 1 tablespoon
  • Tandoori masala - 2 tablespoons
  • Turmeric powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Red chili powder - 1 teaspoon
  • Oil - 2 tablespoons
  • Fresh cilantro - for garnish

Steps

  1. In a bowl, mix yogurt, lemon juice, ginger paste, garlic paste, tandoori masala, turmeric powder, cumin powder, coriander powder, salt, and red chili powder until well combined.
  2. Add the chicken thigh fillets to the marinade and ensure they are thoroughly coated. Cover and refrigerate for at least 30 minutes, preferably overnight for maximum flavor.
  3. Preheat your grill to medium-high heat. If using a charcoal grill, let the coals burn until they are covered with gray ash.
  4. Remove the chicken from the marinade, allowing any excess to drip off. Brush the chicken with oil on both sides.
  5. Place the chicken on the grill and cook for about 6-7 minutes per side, or until the internal temperature reaches 75°C (165°F) and there are grill marks.
  6. Once cooked, remove the chicken from the grill and let it rest for 5 minutes.
  7. Garnish with fresh cilantro before serving. Enjoy with a side of gluten-free naan or a fresh salad.
