Ingredients

  • 2 large bell peppers - any color
  • 250 grams minced chicken (or beef)
  • 1 small onion - finely chopped
  • 2 cloves garlic - minced
  • 1 teaspoon ginger - grated
  • 2 tablespoons tandoori masala
  • 1 tablespoon plain yogurt
  • 1 tablespoon lemon juice
  • 1 small tomato - diced
  • 50 grams spinach - chopped
  • Salt - to taste
  • 1 tablespoon olive oil
  • Fresh coriander - for garnish

Steps

  1. Preheat your grill or oven to 200°C (390°F).
  2. Slice the tops off the bell peppers and remove the seeds and membranes. Brush the outside of the peppers with olive oil and set aside.
  3. In a skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onions, garlic, and ginger, sautéing until the onions are translucent.
  4. Add the minced chicken to the skillet and cook until browned, breaking it apart with a spoon.
  5. Stir in the tandoori masala, yogurt, lemon juice, diced tomatoes, and chopped spinach. Season with salt to taste. Cook for 5-7 minutes until everything is well combined and the chicken is fully cooked.
  6. Stuff the bell peppers with the chicken mixture, packing it tightly.
  7. Place the stuffed peppers upright on the grill or in a baking dish. Grill or bake for about 20-25 minutes until the peppers are tender and slightly charred.
  8. Garnish with fresh coriander before serving.
