Ingredients

  • Spinach - 200 grams
  • Greek yogurt - 100 grams
  • Lemon juice - 1 tablespoon
  • Ginger paste - 1 teaspoon
  • Garlic paste - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Fresh coriander - for garnish

Steps

  1. Wash the spinach leaves thoroughly and blanch them in boiling water for 2 minutes. Drain and transfer to an ice bath to stop the cooking process. Squeeze out excess water and set aside.
  2. In a mixing bowl, combine Greek yogurt, lemon juice, ginger paste, garlic paste, garam masala, cumin powder, turmeric powder, red chili powder, and salt. Mix well until smooth.
  3. Add the blanched spinach to the yogurt mixture and coat the leaves evenly. Marinate for at least 15 minutes.
  4. Preheat the grill or BBQ to medium-high heat. Brush the grill grates with olive oil to prevent sticking.
  5. Skewer the marinated spinach leaves onto skewers. Grill for about 5-7 minutes, turning occasionally, until the spinach is slightly charred and cooked through.
  6. Remove from the grill and garnish with fresh coriander before serving.
