- Spinach - 200 grams
- Greek yogurt - 100 grams
- Lemon juice - 1 tablespoon
- Ginger paste - 1 teaspoon
- Garlic paste - 1 teaspoon
- Garam masala - 1 teaspoon
- Cumin powder - 1/2 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Fresh coriander - for garnish
Steps
- Wash the spinach leaves thoroughly and blanch them in boiling water for 2 minutes. Drain and transfer to an ice bath to stop the cooking process. Squeeze out excess water and set aside.
- In a mixing bowl, combine Greek yogurt, lemon juice, ginger paste, garlic paste, garam masala, cumin powder, turmeric powder, red chili powder, and salt. Mix well until smooth.
- Add the blanched spinach to the yogurt mixture and coat the leaves evenly. Marinate for at least 15 minutes.
- Preheat the grill or BBQ to medium-high heat. Brush the grill grates with olive oil to prevent sticking.
- Skewer the marinated spinach leaves onto skewers. Grill for about 5-7 minutes, turning occasionally, until the spinach is slightly charred and cooked through.
- Remove from the grill and garnish with fresh coriander before serving.
