Ingredients
- Cauliflower - 400 grams (for crust)
- Mozzarella cheese - 200 grams, shredded
- Almond flour - 50 grams
- Egg - 1 large
- Salt - 1 teaspoon
- Olive oil - 1 tablespoon
- Tandoori masala - 1 tablespoon
- Prawns - 200 grams, cleaned and deveined
- Greek yogurt - 2 tablespoons
- Fresh cilantro - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Red onion - 50 grams, thinly sliced
- Bell pepper - 50 grams, thinly sliced
Steps
- Preheat the oven to 220°C (425°F).
- For the crust, steam the cauliflower florets until soft, then drain and let cool. Once cooled, blend until smooth.
- In a bowl, combine the cauliflower puree, mozzarella cheese, almond flour, egg, and salt. Mix well to form a dough.
- Spread the dough onto a parchment-lined baking sheet, shaping it into a pizza base about 1cm thick.
- Bake the crust for 15-20 minutes until golden and firm.
- While the crust is baking, marinate the prawns with tandoori masala, lemon juice, and Greek yogurt. Let it sit for 10-15 minutes.
- In a skillet, heat olive oil over medium heat. Add the marinated prawns and cook for 5-7 minutes until they turn pink and are cooked through.
- Remove the crust from the oven, and spread the cooked prawns evenly over the top.
- Add sliced red onions and bell peppers to the pizza.
- Return the pizza to the oven and bake for an additional 5 minutes.
- Garnish with fresh cilantro before serving.
