Ingredients

  • Cauliflower - 400 grams (for crust)
  • Mozzarella cheese - 200 grams, shredded
  • Almond flour - 50 grams
  • Egg - 1 large
  • Salt - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Tandoori masala - 1 tablespoon
  • Prawns - 200 grams, cleaned and deveined
  • Greek yogurt - 2 tablespoons
  • Fresh cilantro - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Red onion - 50 grams, thinly sliced
  • Bell pepper - 50 grams, thinly sliced

Steps

  1. Preheat the oven to 220°C (425°F).
  2. For the crust, steam the cauliflower florets until soft, then drain and let cool. Once cooled, blend until smooth.
  3. In a bowl, combine the cauliflower puree, mozzarella cheese, almond flour, egg, and salt. Mix well to form a dough.
  4. Spread the dough onto a parchment-lined baking sheet, shaping it into a pizza base about 1cm thick.
  5. Bake the crust for 15-20 minutes until golden and firm.
  6. While the crust is baking, marinate the prawns with tandoori masala, lemon juice, and Greek yogurt. Let it sit for 10-15 minutes.
  7. In a skillet, heat olive oil over medium heat. Add the marinated prawns and cook for 5-7 minutes until they turn pink and are cooked through.
  8. Remove the crust from the oven, and spread the cooked prawns evenly over the top.
  9. Add sliced red onions and bell peppers to the pizza.
  10. Return the pizza to the oven and bake for an additional 5 minutes.
  11. Garnish with fresh cilantro before serving.
