- Fresh cilantro - for garnish
Steps
- In a large bowl, combine the yogurt, lemon juice, garlic paste, ginger paste, ground cumin, ground coriander, paprika, turmeric powder, garam masala, salt, and black pepper to make a marinade.
- Add the lamb ribs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
- Preheat your grill or oven to 200°C (390°F). If using a grill, prepare for indirect cooking.
- Remove the ribs from the marinade and place them on the grill or a baking tray lined with parchment paper.
- Brush the ribs with olive oil and grill or bake for 30-40 minutes, turning occasionally, until they are cooked through and have a nice char.
- Once cooked, let the ribs rest for 5 minutes before serving.
- Garnish with fresh cilantro and serve with lemon wedges.
