Ingredients

  • Lamb ribs - 500 grams
  • Plain yogurt - 100 grams
  • Lemon juice - 2 tablespoons
  • Garlic paste - 1 tablespoon
  • Ginger paste - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Fresh cilantro - for garnish

Steps

  1. In a large bowl, combine the yogurt, lemon juice, garlic paste, ginger paste, ground cumin, ground coriander, paprika, turmeric powder, garam masala, salt, and black pepper to make a marinade.
  2. Add the lamb ribs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
  3. Preheat your grill or oven to 200°C (390°F). If using a grill, prepare for indirect cooking.
  4. Remove the ribs from the marinade and place them on the grill or a baking tray lined with parchment paper.
  5. Brush the ribs with olive oil and grill or bake for 30-40 minutes, turning occasionally, until they are cooked through and have a nice char.
  6. Once cooked, let the ribs rest for 5 minutes before serving.
  7. Garnish with fresh cilantro and serve with lemon wedges.
