Ingredients

  • Young green jackfruit - 400 grams (drained and rinsed)
  • Plain vegan yogurt - 100 grams
  • Tandoori masala - 2 tablespoons
  • Ginger paste - 1 teaspoon
  • Garlic paste - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Turmeric powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Oil - 1 tablespoon (for grilling)
  • Fresh cilantro - for garnish

Steps

  1. Preheat your grill or oven to 200°C (400°F).
  2. In a mixing bowl, combine the vegan yogurt, tandoori masala, ginger paste, garlic paste, lemon juice, turmeric powder, cumin powder, paprika, and salt to create the marinade.
  3. Add the drained jackfruit to the marinade and mix well, ensuring all pieces are coated. Let it marinate for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).
  4. After marinating, thread the jackfruit pieces onto skewers or place them in a grilling basket.
  5. Brush the skewers with oil and place them on the grill or in the oven.
  6. Grill for about 20-25 minutes, turning occasionally until the jackfruit is slightly charred and heated through.
  7. Remove from the grill and garnish with fresh cilantro before serving.
