Ingredients

  • Cauliflower - 1 medium head (about 600g)
  • Plain yogurt - 150g
  • Lemon juice - 2 tablespoons
  • Ginger paste - 1 teaspoon
  • Garlic paste - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Vegetable oil - 1 tablespoon
  • Fresh cilantro - for garnish

Steps

  1. Preheat the oven to 220°C (425°F) or prepare a grill.
  2. Cut the cauliflower into florets and set aside.
  3. In a mixing bowl, combine the yogurt, lemon juice, ginger paste, garlic paste, ground cumin, ground coriander, garam masala, turmeric, red chili powder, and salt to create a marinade.
  4. Add the cauliflower florets to the marinade and coat them well. Let it marinate for at least 20 minutes.
  5. Line a baking tray with parchment paper and place the marinated cauliflower florets on it. Drizzle with vegetable oil.
  6. Bake in the preheated oven for 25-30 minutes, turning halfway through, until the cauliflower is tender and slightly charred. If using a grill, cook for about 15-20 minutes, turning occasionally.
  7. Once done, remove from the oven/grill and let it cool slightly.
  8. Garnish with fresh cilantro before serving.
