- Cauliflower - 1 medium head (about 600g)
- Plain yogurt - 150g
- Lemon juice - 2 tablespoons
- Ginger paste - 1 teaspoon
- Garlic paste - 1 teaspoon
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Garam masala - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Salt - 1 teaspoon
- Vegetable oil - 1 tablespoon
- Fresh cilantro - for garnish
Steps
- Preheat the oven to 220°C (425°F) or prepare a grill.
- Cut the cauliflower into florets and set aside.
- In a mixing bowl, combine the yogurt, lemon juice, ginger paste, garlic paste, ground cumin, ground coriander, garam masala, turmeric, red chili powder, and salt to create a marinade.
- Add the cauliflower florets to the marinade and coat them well. Let it marinate for at least 20 minutes.
- Line a baking tray with parchment paper and place the marinated cauliflower florets on it. Drizzle with vegetable oil.
- Bake in the preheated oven for 25-30 minutes, turning halfway through, until the cauliflower is tender and slightly charred. If using a grill, cook for about 15-20 minutes, turning occasionally.
- Once done, remove from the oven/grill and let it cool slightly.
- Garnish with fresh cilantro before serving.
