- Cauliflower - 1 medium head (about 500g)
- Greek yogurt - 100g
- Garlic - 3 cloves, minced
- Ginger - 1 inch piece, grated
- Garam masala - 1 teaspoon
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Lemon juice - 1 tablespoon
- Salt - 1 teaspoon
- Olive oil - 1 tablespoon
- Fresh cilantro - for garnish
Steps
- Preheat your oven to 200°C (400°F).
- Cut the cauliflower into florets and set aside.
- In a mixing bowl, combine Greek yogurt, minced garlic, grated ginger, garam masala, ground cumin, ground coriander, turmeric powder, red chili powder, lemon juice, salt, and olive oil. Mix well to form a smooth marinade.
- Add the cauliflower florets to the marinade, ensuring they are well coated. Let it marinate for at least 20 minutes.
- Arrange the marinated cauliflower florets on a baking tray lined with parchment paper.
- Roast the cauliflower in the preheated oven for 25-30 minutes, turning halfway through, until golden brown and tender.
- Once done, remove from the oven and garnish with fresh cilantro before serving.
