  • salt - 1 teaspoon
  • olive oil - 1 tablespoon
  • whole wheat flatbreads - 2 pieces
  • cucumber, sliced - 100 grams
  • red onion, thinly sliced - 50 grams
  • tomato, diced - 100 grams
  • fresh cilantro, chopped - 2 tablespoons
  • lime wedges - 2 pieces

Steps

  1. In a bowl, combine yogurt, tandoori masala, lemon juice, minced garlic, minced ginger, and salt to create a marinade.
  2. Add the chicken thighs to the marinade and coat well. Cover and refrigerate for at least 30 minutes or up to 2 hours for best flavor.
  3. Preheat the grill or a grill pan over medium-high heat. Brush with olive oil.
  4. Remove the chicken from the marinade and grill for about 5-7 minutes on each side, or until fully cooked and slightly charred. Ensure the internal temperature reaches 75°C.
  5. Once cooked, remove the chicken from the grill and let it rest for a few minutes before slicing it into strips.
  6. Warm the whole wheat flatbreads on the grill for about 1 minute on each side.
