- Chicken thighs - 4 pieces (about 600g)
- Greek yogurt - 150g
- Lemon juice - 2 tablespoons
- Garlic - 4 cloves, minced
- Ginger - 1 tablespoon, grated
- Garam masala - 1 tablespoon
- Paprika - 1 teaspoon
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Cayenne pepper - 1/2 teaspoon (adjust to taste)
- Salt - 1 teaspoon
- Vegetable oil - 2 tablespoons
- Fresh cilantro - for garnish
Steps
- In a large mixing bowl, combine Greek yogurt, lemon juice, minced garlic, grated ginger, garam masala, paprika, ground cumin, ground coriander, turmeric powder, cayenne pepper, salt, and vegetable oil. Mix well to form a marinade.
- Add the chicken thighs to the marinade, ensuring they are thoroughly coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, preferably up to 4 hours for deeper flavor.
- Preheat your grill or oven to a high temperature (about 200°C or 400°F).
- Remove the chicken thighs from the marinade and shake off excess. Place them on the grill or a baking tray lined with foil.
- Grill the chicken for about 25-30 minutes, turning halfway through, until the chicken is cooked through and has a nice char. The internal temperature should reach 75°C (165°F).
- Once cooked, remove the chicken from the grill and let it rest for 5 minutes.
- Garnish with fresh cilantro and serve hot with naan or rice.
