Ingredients

  • Whole wheat pizza base - 1 medium (about 200g)
  • Chicken breast, boneless - 150g
  • Plain Greek yogurt - 100g
  • Tandoori masala - 1 tablespoon
  • Garlic, minced - 1 teaspoon
  • Ginger, grated - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Red onion, thinly sliced - 50g
  • Bell pepper, thinly sliced - 50g
  • Tomato, diced - 1 medium
  • Fresh coriander leaves, chopped - 2 tablespoons
  • Low-fat mozzarella cheese, shredded - 100g
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a bowl, mix the Greek yogurt, tandoori masala, minced garlic, grated ginger, lemon juice, olive oil, salt, and black pepper to create the marinade.
  2. Cut the chicken breast into bite-sized pieces and add it to the marinade. Cover and refrigerate for at least 15 minutes.
  3. Preheat the oven to 220°C (428°F).
  4. While the chicken marinates, prepare the pizza base on a baking tray lined with parchment paper.
  5. After marinating, grill or pan-cook the chicken over medium heat until fully cooked, about 8-10 minutes.
  6. Spread the cooked chicken evenly over the pizza base.
  7. Top the chicken with sliced red onion, bell pepper, diced tomato, and shredded mozzarella cheese.
  8. Bake the pizza in the preheated oven for 10-12 minutes or until the cheese is melted and bubbly.
  9. Remove from the oven, garnish with fresh coriander leaves, and let it cool for a few minutes before slicing.
