- Chicken breast, boneless - 150g
- Plain Greek yogurt - 100g
- Tandoori masala - 1 tablespoon
- Garlic, minced - 1 teaspoon
- Ginger, grated - 1 teaspoon
- Lemon juice - 1 tablespoon
- Olive oil - 1 tablespoon
- Red onion, thinly sliced - 50g
- Bell pepper, thinly sliced - 50g
- Tomato, diced - 1 medium
- Fresh coriander leaves, chopped - 2 tablespoons
- Low-fat mozzarella cheese, shredded - 100g
- Salt - to taste
- Black pepper - to taste
Steps
- In a bowl, mix the Greek yogurt, tandoori masala, minced garlic, grated ginger, lemon juice, olive oil, salt, and black pepper to create the marinade.
- Cut the chicken breast into bite-sized pieces and add it to the marinade. Cover and refrigerate for at least 15 minutes.
- Preheat the oven to 220°C (428°F).
- While the chicken marinates, prepare the pizza base on a baking tray lined with parchment paper.
- After marinating, grill or pan-cook the chicken over medium heat until fully cooked, about 8-10 minutes.
- Spread the cooked chicken evenly over the pizza base.
- Top the chicken with sliced red onion, bell pepper, diced tomato, and shredded mozzarella cheese.
- Bake the pizza in the preheated oven for 10-12 minutes or until the cheese is melted and bubbly.
- Remove from the oven, garnish with fresh coriander leaves, and let it cool for a few minutes before slicing.
