Ingredients

  • Basmati rice - 200 grams
  • Chicken thighs (boneless) - 300 grams
  • Plain yogurt - 100 grams
  • Tandoori masala - 2 tablespoons
  • Garlic paste - 1 teaspoon
  • Ginger paste - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Onion - 1 medium, thinly sliced
  • Tomato - 1 medium, chopped
  • Green chili - 1, slit
  • Cilantro (fresh) - 2 tablespoons, chopped
  • Mint leaves - 2 tablespoons, chopped
  • Ghee or vegetable oil - 2 tablespoons
  • Whole spices (bay leaf, cloves, cardamom, cinnamon) - 1 each
  • Salt - to taste
  • Water - 400 milliliters

Steps

  1. In a bowl, combine yogurt, tandoori masala, garlic paste, ginger paste, lemon juice, and salt. Add chicken thighs to the marinade and coat well. Cover and refrigerate for at least 30 minutes.
  2. Rinse basmati rice under cold water until the water runs clear. Soak the rice in water for 20 minutes, then drain.
  3. In a large pot, heat ghee or oil over medium heat. Add sliced onions and sauté until golden brown. Remove half for garnishing.
  4. To the remaining onions in the pot, add chopped tomatoes and green chili. Cook until tomatoes are soft.
  5. Add the marinated chicken to the pot and cook until it is browned and cooked through, about 10-15 minutes.
  6. In a separate pot, bring 400 milliliters of water to a boil. Add soaked rice, whole spices, and a little salt. Cook until rice is 70% done, then drain.
  7. Layer the partially cooked rice over the chicken in the pot. Sprinkle chopped cilantro and mint on top. Cover the pot with a tight-fitting lid and cook on low heat for 15-20 minutes to allow the flavors to meld.
  8. Serve hot, garnished with the reserved fried onions and additional cilantro and mint if desired.
