- Lemon juice - 1 tablespoon
- Cilantro - 2 tablespoons, chopped
- Salt - to taste
- Olive oil - 1 tablespoon
- Chaat masala - 1 teaspoon
Steps
- Preheat your grill or oven to 200°C (400°F).
- In a bowl, mix the diced bell pepper, zucchini, red onion, and cherry tomatoes with olive oil, salt, and tandoori masala until well coated.
- Spread the vegetable mixture evenly on a grilling tray and grill for 15-20 minutes, turning occasionally, until they are tender and slightly charred.
- While the vegetables are grilling, in a separate bowl, whisk together the yogurt, lemon juice, chaat masala, and chopped cilantro.
- Once the vegetables are done, remove them from the grill and let them cool slightly.
- Serve the grilled vegetables drizzled with the yogurt dressing and additional cilantro on top.
