Ingredients

  • Bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Red onion - 1 medium, diced
  • Cherry tomatoes - 200 grams, halved
  • Tandoori masala - 2 tablespoons
  • Yogurt - 100 grams (dairy or plant-based)
  • Lemon juice - 1 tablespoon
  • Cilantro - 2 tablespoons, chopped
  • Salt - to taste
  • Olive oil - 1 tablespoon
  • Chaat masala - 1 teaspoon

Steps

  1. Preheat your grill or oven to 200°C (400°F).
  2. In a bowl, mix the diced bell pepper, zucchini, red onion, and cherry tomatoes with olive oil, salt, and tandoori masala until well coated.
  3. Spread the vegetable mixture evenly on a grilling tray and grill for 15-20 minutes, turning occasionally, until they are tender and slightly charred.
  4. While the vegetables are grilling, in a separate bowl, whisk together the yogurt, lemon juice, chaat masala, and chopped cilantro.
  5. Once the vegetables are done, remove them from the grill and let them cool slightly.
  6. Serve the grilled vegetables drizzled with the yogurt dressing and additional cilantro on top.
