Ingredients

  • Cauliflower - 1 medium head (about 600g)
  • Tandoori masala - 2 tablespoons
  • Soy yogurt - 100g
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Lemon juice - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Whole wheat burger buns - 2
  • Lettuce leaves - 4 leaves
  • Tomato - 1 medium, sliced
  • Cucumber - 1/2 medium, sliced
  • Fresh cilantro - a handful, chopped

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Wash the cauliflower and remove the leaves and stem, then cut it into thick slices (about 1.5cm each).
  3. In a mixing bowl, combine tandoori masala, soy yogurt, minced garlic, grated ginger, lemon juice, olive oil, salt, and black pepper to create a marinade.
  4. Coat each cauliflower slice generously with the marinade, ensuring both sides are well covered. Let it marinate for at least 15 minutes.
  5. Place the marinated cauliflower slices on a baking sheet lined with parchment paper and roast in the preheated oven for 20 minutes, flipping halfway through, until golden brown and tender.
  6. While the cauliflower is roasting, prepare the burger buns by lightly toasting them if desired.
  7. Assemble the burgers by placing a roasted cauliflower slice on the bottom half of each bun, followed by lettuce leaves, sliced tomato, and cucumber. Sprinkle with chopped cilantro.
