- Cauliflower - 1 medium head (about 600g)
- Tandoori masala - 2 tablespoons
- Soy yogurt - 100g
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Lemon juice - 1 tablespoon
- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Whole wheat burger buns - 2
- Lettuce leaves - 4 leaves
- Tomato - 1 medium, sliced
- Cucumber - 1/2 medium, sliced
- Fresh cilantro - a handful, chopped
Steps
- Preheat your oven to 200°C (400°F).
- Wash the cauliflower and remove the leaves and stem, then cut it into thick slices (about 1.5cm each).
- In a mixing bowl, combine tandoori masala, soy yogurt, minced garlic, grated ginger, lemon juice, olive oil, salt, and black pepper to create a marinade.
- Coat each cauliflower slice generously with the marinade, ensuring both sides are well covered. Let it marinate for at least 15 minutes.
- Place the marinated cauliflower slices on a baking sheet lined with parchment paper and roast in the preheated oven for 20 minutes, flipping halfway through, until golden brown and tender.
- While the cauliflower is roasting, prepare the burger buns by lightly toasting them if desired.
- Assemble the burgers by placing a roasted cauliflower slice on the bottom half of each bun, followed by lettuce leaves, sliced tomato, and cucumber. Sprinkle with chopped cilantro.
