- Carrots - 4 medium-sized (about 400g)
- Plain yogurt - 100g
- Tandoori masala - 2 tablespoons
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Lemon juice - 1 tablespoon
- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Fresh coriander - for garnish
Steps
- Preheat your grill or oven to a medium-high temperature (about 200°C or 400°F).
- Peel the carrots and cut them into thick strips or wedges to ensure even cooking.
- In a mixing bowl, combine the plain yogurt, tandoori masala, minced garlic, grated ginger, lemon juice, olive oil, and salt. Mix well to create a marinade.
- Add the carrot strips to the marinade and toss until they are evenly coated. Let them marinate for at least 15 minutes for the flavors to penetrate.
- Once marinated, place the carrots on the grill or a baking tray lined with parchment paper if using an oven.
- Grill for about 20 minutes, turning occasionally, until the carrots are tender and have a nice char. If baking, roast for 20 minutes or until slightly charred.
- Remove from heat and garnish with fresh coriander before serving.
