Ingredients

  • Carrots - 4 medium-sized (about 400g)
  • Plain yogurt - 100g
  • Tandoori masala - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Lemon juice - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Fresh coriander - for garnish

Steps

  1. Preheat your grill or oven to a medium-high temperature (about 200°C or 400°F).
  2. Peel the carrots and cut them into thick strips or wedges to ensure even cooking.
  3. In a mixing bowl, combine the plain yogurt, tandoori masala, minced garlic, grated ginger, lemon juice, olive oil, and salt. Mix well to create a marinade.
  4. Add the carrot strips to the marinade and toss until they are evenly coated. Let them marinate for at least 15 minutes for the flavors to penetrate.
  5. Once marinated, place the carrots on the grill or a baking tray lined with parchment paper if using an oven.
  6. Grill for about 20 minutes, turning occasionally, until the carrots are tender and have a nice char. If baking, roast for 20 minutes or until slightly charred.
  7. Remove from heat and garnish with fresh coriander before serving.
