Ingredients

  • Beetroot - 2 medium-sized (about 250g each)
  • Yogurt (plain, low-fat) - 100g
  • Tandoori masala - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic (minced) - 1 clove
  • Ginger (grated) - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Fresh cilantro (for garnish) - a handful

Steps

  1. Preheat your oven or grill to 200°C (400°F).
  2. Wash and peel the beetroot, then cut them into thick slices (about 1 cm).
  3. In a mixing bowl, combine the yogurt, tandoori masala, lemon juice, minced garlic, grated ginger, olive oil, and salt to create a marinade.
  4. Add the beetroot slices to the marinade and coat them evenly. Let them marinate for at least 30 minutes (you can marinate longer for deeper flavor).
  5. Place the marinated beetroot on a baking tray or grill rack, ensuring they are spaced apart.
  6. Cook in the preheated oven or on the grill for 25-30 minutes, turning halfway through, until they are tender and slightly charred.
  7. Remove from the oven or grill and let them cool for a few minutes.
  8. Garnish with fresh cilantro and serve warm.
