Ingredients
- All-purpose flour - 200 grams
- Water - 100 ml
- Salt - 1/2 teaspoon
- Oil - 1 tablespoon
- Eggs - 4 large
- Onion - 1 small, finely chopped
- Green chilies - 1, finely chopped
- Cilantro - 2 tablespoons, chopped
- Garam masala - 1 teaspoon
- Red chili powder - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Black pepper - 1/4 teaspoon
- Butter - 1 tablespoon (for cooking)
Steps
- In a large bowl, mix the all-purpose flour, salt, and water to form a soft dough. Knead for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 15 minutes.
- In a frying pan, heat 1 tablespoon of oil over medium heat. Add finely chopped onions and green chilies, sautéing until the onions are translucent.
- In a bowl, beat the eggs and add sautéed onion and chilies, chopped cilantro, garam masala, red chili powder, turmeric powder, and black pepper. Mix well to combine.
- Heat the frying pan again and scramble the egg mixture until just set. Remove from heat and let it cool slightly.
- Divide the dough into 4 equal balls. Roll out each ball into a circle about 15 cm in diameter.
- Place a generous spoonful of the egg filling in the center of one rolled-out dough circle. Fold over to create a semi-circle and seal the edges tightly.
- Roll the stuffed dough gently to flatten it further without letting the filling escape. Repeat with the remaining dough and filling.
- Heat a skillet or tandoor over medium-high heat. Cook each Baida Roti for about 2-3 minutes on each side, brushing with butter until golden brown and cooked through.
- Serve hot with yogurt or chutney.
