Ingredients

  • All-purpose flour - 200 grams
  • Water - 100 ml
  • Salt - 1/2 teaspoon
  • Oil - 1 tablespoon
  • Eggs - 4 large
  • Onion - 1 small, finely chopped
  • Green chilies - 1, finely chopped
  • Cilantro - 2 tablespoons, chopped
  • Garam masala - 1 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Butter - 1 tablespoon (for cooking)

Steps

  1. In a large bowl, mix the all-purpose flour, salt, and water to form a soft dough. Knead for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 15 minutes.
  2. In a frying pan, heat 1 tablespoon of oil over medium heat. Add finely chopped onions and green chilies, sautéing until the onions are translucent.
  3. In a bowl, beat the eggs and add sautéed onion and chilies, chopped cilantro, garam masala, red chili powder, turmeric powder, and black pepper. Mix well to combine.
  4. Heat the frying pan again and scramble the egg mixture until just set. Remove from heat and let it cool slightly.
  5. Divide the dough into 4 equal balls. Roll out each ball into a circle about 15 cm in diameter.
  6. Place a generous spoonful of the egg filling in the center of one rolled-out dough circle. Fold over to create a semi-circle and seal the edges tightly.
  7. Roll the stuffed dough gently to flatten it further without letting the filling escape. Repeat with the remaining dough and filling.
  8. Heat a skillet or tandoor over medium-high heat. Cook each Baida Roti for about 2-3 minutes on each side, brushing with butter until golden brown and cooked through.
  9. Serve hot with yogurt or chutney.
