Ingredients

  • Basmati rice - 1 cup
  • Tomatoes - 2 medium, chopped
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green chili - 1, slit
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Oil - 2 tablespoons
  • Fresh coriander leaves - for garnish
  • Water - 2 cups

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a pot, heat the oil over medium heat and add the cumin seeds. Sauté for a few seconds until fragrant.
  3. Add the chopped onions and sauté until they turn translucent.
  4. Stir in the minced garlic, grated ginger, and slit green chili. Cook for another minute until aromatic.
  5. Add the chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until the tomatoes soften and the oil starts to separate from the mixture.
  6. Drain the soaked rice and add it to the pot, mixing well with the tomato mixture.
  7. Pour in the 2 cups of water and bring it to a boil. Once boiling, reduce the heat to low and cover the pot.
  8. Cook for about 15 minutes or until the rice is fully cooked and the water is absorbed.
  9. Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and sprinkle garam masala on top.
  10. Garnish with fresh coriander leaves before serving.
