Ingredients

  • Fresh tomatoes - 300 grams

  • Green chilies - 2, slit
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch piece, grated
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Oil - 1 tablespoon

Steps

  1. Heat 1 tablespoon of oil in a pan over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Stir in the minced garlic, grated ginger, and slit green chilies; cook for another minute.
  4. Add the fresh tomatoes, salt, turmeric, cumin, and coriander powder to the pan.
  5. Cook the mixture until the tomatoes break down and the oil separates from the chutney, about 10-12 minutes.
  6. Remove from heat and let it cool slightly.
  7. Blend the mixture until smooth, then stir in the chopped coriander leaves.
  8. Serve the chutney warm or at room temperature with your favorite dishes.
