Ingredients

  • Tamarind paste - 2 tablespoons
  • Water - 500 ml
  • Vegetable broth - 250 ml
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Fresh ginger - 1 inch, grated
  • Green chili - 1, slit
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Mustard seeds - 1/2 teaspoon
  • Salt - to taste
  • Coriander leaves - a handful, chopped for garnish
  • Oil - 1 tablespoon

Steps

  1. In a pot, heat the oil over medium heat and add the cumin and mustard seeds. Let them splutter.
  2. Add the finely chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic, grated ginger, and slit green chili. Cook for another 2 minutes until fragrant.
  4. Add the chopped tomato and turmeric powder, and cook until the tomato softens, about 5 minutes.
  5. Dissolve the tamarind paste in 500 ml of water and add it to the pot along with the vegetable broth. Stir well.
  6. Bring the mixture to a boil, then reduce the heat and let it simmer for 10 minutes to allow the flavors to meld.
  7. Season with salt to taste and garnish with chopped coriander leaves before serving.
