- Tamarind paste - 2 tablespoons
- Water - 500 ml
- Vegetable broth - 250 ml
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, chopped
- Garlic - 2 cloves, minced
- Fresh ginger - 1 inch, grated
- Green chili - 1, slit
- Turmeric powder - 1/2 teaspoon
- Cumin seeds - 1/2 teaspoon
- Mustard seeds - 1/2 teaspoon
- Salt - to taste
- Coriander leaves - a handful, chopped for garnish
- Oil - 1 tablespoon
Steps
- In a pot, heat the oil over medium heat and add the cumin and mustard seeds. Let them splutter.
- Add the finely chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, grated ginger, and slit green chili. Cook for another 2 minutes until fragrant.
- Add the chopped tomato and turmeric powder, and cook until the tomato softens, about 5 minutes.
- Dissolve the tamarind paste in 500 ml of water and add it to the pot along with the vegetable broth. Stir well.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 10 minutes to allow the flavors to meld.
- Season with salt to taste and garnish with chopped coriander leaves before serving.
