- Basmati rice - 1 cup
- Tamarind paste - 2 tablespoons
- Water - 2 cups
- Mustard seeds - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Green chilies - 2, slit
- Curry leaves - 10 leaves
- Peanuts - 1/4 cup, roasted
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1-inch piece, grated
- Salt - to taste
- Fresh coriander leaves - for garnishing
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a pot, bring 2 cups of water to a boil and add the soaked rice. Cook for about 15 minutes until the rice is fluffy and water is absorbed. Remove from heat and let it sit covered.
- In a large pan, heat 2 tablespoons of oil over medium heat. Add mustard seeds and let them splutter.
- Add cumin seeds, curry leaves, and slit green chilies to the pan. Sauté for a minute until fragrant.
- Add the chopped onions, minced garlic, and grated ginger. Sauté until the onions turn golden brown.
- Stir in the turmeric powder and tamarind paste, mixing well. Cook for 2-3 minutes to blend the flavors.
- Add the cooked rice to the pan and mix gently to coat the rice evenly with the tamarind mixture.
- Add the roasted peanuts and salt to taste. Mix well and cook for an additional 2-3 minutes to heat through.
- Garnish with fresh coriander leaves and serve hot.
