Ingredients

  • Basmati rice - 1 cup
  • Tamarind paste - 2 tablespoons
  • Water - 2 cups
  • Mustard seeds - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Green chilies - 2, slit
  • Curry leaves - 10 leaves
  • Peanuts - 1/4 cup, roasted
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1-inch piece, grated
  • Salt - to taste
  • Fresh coriander leaves - for garnishing

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a pot, bring 2 cups of water to a boil and add the soaked rice. Cook for about 15 minutes until the rice is fluffy and water is absorbed. Remove from heat and let it sit covered.
  3. In a large pan, heat 2 tablespoons of oil over medium heat. Add mustard seeds and let them splutter.
  4. Add cumin seeds, curry leaves, and slit green chilies to the pan. Sauté for a minute until fragrant.
  5. Add the chopped onions, minced garlic, and grated ginger. Sauté until the onions turn golden brown.
  6. Stir in the turmeric powder and tamarind paste, mixing well. Cook for 2-3 minutes to blend the flavors.
  7. Add the cooked rice to the pan and mix gently to coat the rice evenly with the tamarind mixture.
  8. Add the roasted peanuts and salt to taste. Mix well and cook for an additional 2-3 minutes to heat through.
  9. Garnish with fresh coriander leaves and serve hot.
