- Garlic - 2 cloves, minced
- Ginger - 1 inch, grated
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/4 teaspoon (adjust to taste)
- Vegetable broth - 500 ml
- Coconut milk - 200 ml
- Salt - to taste
- Fresh cilantro - for garnish
Steps
- In a large pot, heat coconut oil over medium heat. Add cumin seeds and sauté until they start to sizzle.
- Add chopped onions and sauté for 5-7 minutes until they are translucent.
- Stir in minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
- Add diced sweet potatoes, coriander powder, turmeric powder, and red chili powder. Stir well to coat the sweet potatoes with spices.
- Pour in the vegetable broth, bring the mixture to a boil, then reduce heat and simmer for about 15-20 minutes, or until sweet potatoes are tender.
- Once sweet potatoes are cooked, use an immersion blender to puree the soup until smooth. Alternatively, transfer to a blender in batches.
- Stir in the coconut milk and season with salt to taste. Heat through for another 2-3 minutes.
- Ladle the soup into bowls and garnish with fresh cilantro before serving.
