Ingredients

  • Sweet potatoes - 400 grams
  • Coconut milk - 100 ml
  • Ghee - 2 tablespoons
  • Ground cinnamon - 1 teaspoon
  • Ground nutmeg - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chopped fresh cilantro - 2 tablespoons
  • Chopped pecans - 30 grams

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Peel and chop the sweet potatoes into small cubes.
  3. In a pot, boil water and add the sweet potato cubes. Cook for about 15 minutes or until tender.
  4. Drain the sweet potatoes and transfer them to a mixing bowl.
  5. Add coconut milk, ghee, cinnamon, nutmeg, salt, and black pepper to the sweet potatoes. Mash until smooth.
  6. Stir in the chopped cilantro and half of the pecans, mixing well.
  7. Transfer the sweet potato mixture into a greased baking dish and smooth the top.
  8. Sprinkle the remaining pecans over the top.
  9. Bake in the preheated oven for 25-30 minutes until golden and heated through.
  10. Remove from the oven, let cool slightly, and serve warm.
