- Sweet potatoes - 400 grams
- Coconut milk - 100 ml
- Ghee - 2 tablespoons
- Ground cinnamon - 1 teaspoon
- Ground nutmeg - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chopped fresh cilantro - 2 tablespoons
- Chopped pecans - 30 grams
Steps
- Preheat the oven to 180°C (350°F).
- Peel and chop the sweet potatoes into small cubes.
- In a pot, boil water and add the sweet potato cubes. Cook for about 15 minutes or until tender.
- Drain the sweet potatoes and transfer them to a mixing bowl.
- Add coconut milk, ghee, cinnamon, nutmeg, salt, and black pepper to the sweet potatoes. Mash until smooth.
- Stir in the chopped cilantro and half of the pecans, mixing well.
- Transfer the sweet potato mixture into a greased baking dish and smooth the top.
- Sprinkle the remaining pecans over the top.
- Bake in the preheated oven for 25-30 minutes until golden and heated through.
- Remove from the oven, let cool slightly, and serve warm.
