- Sweet corn kernels - 200 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green chili - 1, slit
- Vegetable broth - 500 ml
- Coconut milk - 100 ml
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/4 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh coriander leaves - for garnish
- Lemon juice - 1 tablespoon
Steps
- In a pot, heat 1 tablespoon of oil over medium heat and add cumin seeds. Allow them to sizzle for a few seconds.
- Add the chopped onion, garlic, and ginger to the pot. Sauté until the onion becomes translucent.
- Stir in the turmeric powder and green chili, and cook for an additional minute.
- Add the sweet corn kernels and vegetable broth to the pot. Bring to a boil, then reduce heat and let it simmer for 15 minutes.
- Once the corn is tender, blend the soup using an immersion blender until smooth. Alternatively, you can transfer it to a blender in batches.
- Return the blended soup to the pot, and stir in the coconut milk. Cook for another 5 minutes on low heat.
- Season with salt, black pepper, and lemon juice. Adjust seasoning as needed.
- Serve hot, garnished with fresh coriander leaves.
