Ingredients

  • Sweet corn kernels - 200 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green chili - 1, slit
  • Vegetable broth - 500 ml
  • Coconut milk - 100 ml
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh coriander leaves - for garnish
  • Lemon juice - 1 tablespoon

Steps

  1. In a pot, heat 1 tablespoon of oil over medium heat and add cumin seeds. Allow them to sizzle for a few seconds.
  2. Add the chopped onion, garlic, and ginger to the pot. Sauté until the onion becomes translucent.
  3. Stir in the turmeric powder and green chili, and cook for an additional minute.
  4. Add the sweet corn kernels and vegetable broth to the pot. Bring to a boil, then reduce heat and let it simmer for 15 minutes.
  5. Once the corn is tender, blend the soup using an immersion blender until smooth. Alternatively, you can transfer it to a blender in batches.
  6. Return the blended soup to the pot, and stir in the coconut milk. Cook for another 5 minutes on low heat.
  7. Season with salt, black pepper, and lemon juice. Adjust seasoning as needed.
  8. Serve hot, garnished with fresh coriander leaves.
