- Sushi-grade fish (salmon or tuna) - 200 grams, diced
- Nori sheets - 2 sheets
- Cauliflower rice - 1 cup, cooked
- Cucumber - 1 medium, julienned
- Carrot - 1 medium, julienned
- Avocado - 1 medium, sliced
- Fresh cilantro - 1/4 cup, chopped
- Lemon juice - 1 tablespoon
- Sea salt - to taste
- Wasabi - optional, for serving
- Coconut aminos - 2 tablespoons, for dipping
Steps
- Prepare the cauliflower rice by pulsing florets in a food processor until they resemble rice, then steam for 5 minutes and let cool.
- In a bowl, mix the diced sushi-grade fish with lemon juice, chopped cilantro, and a pinch of sea salt.
- Lay a nori sheet on a bamboo mat, shiny side down. Spread half of the cauliflower rice evenly over the nori, leaving a 2 cm border at the top.
- Arrange half of the cucumber, carrot, avocado, and the fish mixture in a line across the center of the rice.
- Using the bamboo mat, carefully roll the sushi tightly from the bottom up, applying gentle pressure. Seal the edge with a little water.
- Repeat the process with the second nori sheet and remaining ingredients.
- Using a sharp knife, slice each roll into 6-8 pieces. Serve with coconut aminos and wasabi if desired.
