Ingredients

  • Sunflower seeds - 200 grams
  • Flaxseed meal - 2 tablespoons
  • Water - 120 ml
  • Coconut oil - 2 tablespoons, melted
  • Turmeric powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Tomato sauce - 100 grams
  • Paneer cheese - 100 grams, cubed
  • Bell pepper - 1/2, sliced
  • Onion - 1/2, sliced
  • Fresh cilantro - for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Soak the sunflower seeds in water for about 2 hours, then drain and rinse.
  3. In a food processor, combine the soaked sunflower seeds, flaxseed meal, melted coconut oil, turmeric, cumin, salt, and black pepper. Blend until a dough-like consistency forms.
  4. Line a baking sheet with parchment paper and spread the sunflower seed mixture onto it, forming a round pizza crust about 1/2 cm thick.
  5. Bake the crust in the preheated oven for 15-20 minutes, or until golden and firm.
  6. While the crust is baking, prepare the toppings. In a bowl, mix the tomato sauce with the cubed paneer, sliced bell pepper, and onion.
  7. Once the crust is done, remove it from the oven and spread the tomato sauce mixture evenly over the top.
  8. Return the pizza to the oven and bake for an additional 10-15 minutes, until the vegetables are tender and the paneer is slightly golden.
  9. Remove from the oven, garnish with fresh cilantro, and let it cool for a few minutes before slicing and serving.
